They can be grown into a hardy vegetable and are fairly easy to grow in a variety of climates. Mary Washington is the traditional variety which consists of both male and female stalks. It is resistant to rust fungi, which can harm other varieties of Asparagus. It’s important to note that an asparagus bed won’t hit full maturity for about 2-3 years. But once that happens, it’s worth the wait, as they will produce an abundant crop of spears spring after spring for the next 20 to 30 years.
